 1 cup frozen mango chunks
 ½ avocado
 ¼ cucumber
 ¾ cup frozen spinach
 juice from 1/4 lemon

Place spinach in a small pot with some water and bring to boil. Let simmer for 3 minutes. Cool briefly while combining other ingredients. (*This step reduces oxalates in the spinach, which are compounds which inhibit absorption of the nutrients such as calcium and iron!*)

Add avocado, cucumber, and mango to the blender.

Using a slotted spoon, add spinach on top, then squeeze the lemon juice directly on top of the spinach. (*Lemon juice increases the absorption of iron from plant-based foods!*)

Add a few tablespoons of water if needed, blend until super-creamy, and enjoy!!!!

I ate this with a cup of leftover quinoa for a balanced breakfast!!!
