An energizing breakfast that fuels your metabolism with protein & fiber! Cook once, eat all week for a quick, yet nourishing breakfast.

 1 yellow onion, thinly sliced
 1 large garlic clove, minced
 1 lb ground turkey
 1 cup organic salsa
 1 can black beans, rinsed
 1 can organic diced tomatoes
 1 tbsp chili powder
  cup fresh cilantro, minced
 1 tbsp olive oil

Heat olive oil in a large pot on medium heat. Add onion, saute for a few minutes, until starting to turn golden brown. Add garlic and stir. Let cook for 30 seconds.

Add ground turkey, and a pinch of salt and pepper. Brown for 5-6 minutes, breaking up into smaller pieces with a wooden spoon.

Add salsa, black beans, tomatoes (in their juice), chili powder, and a few tablespoons of water if needed. Stir well and simmer on low heat for about 5 minutes.

Add cilantro, stir, and let sit for a few minutes, covered (to soak up juices).

Serve, or cool and refrigerate for breakfasts!

I made a big batch tonight and it will be breakfast for the week!
