Creamy coconut milk or yogurt, naturally sweet beets, and a perfect balance of ginger & lemon. Love for your liver!

 1 package of Trader Joe's steamed beets
 ¾ cup coconut milk or yogurt or other nut milk or yogurt
 ½ tbsp lemon juice
 1 tsp fresh grated ginger (or 1/4 tsp. dried ginger)

Combine all ingredients in food processor. Top with lemon zest if desired!

Depending on your desired consistency, use full-fat canned coconut milk for a thicker smoothie, reduced fat or light for a thinner smoothie. In this photo, I used homemade coconut yogurt, which was on the thicker side.
