Gluten-free, grain free, soft & crispy crepes made with 2 ingredients!!

 1 ¼ cups garbanzo bean flour
 1 ⅓ cups water
 ¼ tsp fine sea salt
 ¼ tsp cumin (optional)
 coconut or olive oil or cooking

Combine garbanzo bean flour, water, salt, and seasonings (if using). You may use either a blender (30 seconds) or a whisk (1 minute) to blend until completely mixed, no lumps remaining.

Let batter sit for about 30 minutes.

Heat 1/2-1 tbsp. oil (coconut oil or olive oil) in a 10" skillet on medium heat. Swirl around or use a paper towel to evenly coat pan.
Add 1/3 cup of batter and swirl around the skillet to coat evenly.

Cook for about 2 minutes, until the edges begin to lift off the pan. Loosen with a spatula and flip over. Cook an additional 2 minutes, until each side is lightly browned. The edges will be crispy and the middle slightly softer.

Top with lettuce, sauteed mushrooms, mustard, guacamole, salsa, roasted corn, microgreens, grilled vegetables, roasted turkey or chicken, etc! The possibilities are endless!
