Fresh strawberries are briefly marinated in tangy balsamic and paired with creamy goat cheese for a special summer treat!

 1 lb fresh (organic) strwaberries
 1 baguette
 4 oz goat cheese (log is preferable, but crumbles could work too)
 1 tbsp olive oil, divided (The Crescent Olive's Basil olive oil!)
 2 tbsp dark balsamic vinegar (The Crescent Olive's Neapolitan OR Strawberry dark balsamic!)
 1 pinch salt
 fresh or dried basil

Prepare strawberries:

Wash and chop strawberries. Place in a glass bowl (Pyrex works great).
Drizzle with about 1/2 tbsp olive oil, 2 tbsp dark balsamic vinegar, and a pinch of salt.
Mix well and marinate in refrigerator. If you are short on time leave it for 15 minutes - or overnight if you're making it ahead of time!

Toast bread:

If you buy a fresh baguette early, slice into 1/4" slices and freeze for maximum freshness. Thaw 1 hour before use.

Preheat oven or toaster oven to 350 degrees F. Arrange slices on baking tray. Drizzle with olive oil and a pinch of salt. Toast for 5 min on each side and cool briefly.

Assemble Bruschetta:

Spread thin layer of goat cheese on each toast. Top with strawberries, an extra drizzle of balsamic, and basil!
Serve immediately!
