An easy one-pan meal that is flavorful & hearty!

 2 bone-in chicken breasts
 3 medium russet potatoes (organic)
 4 medium carrots (organic)
 2 tbsp dried thyme
 2 tbsp olive oil (The Crescent Olive's Black Peppercorn!)
 2 tbsp balsamic vinegar (The Crescent Olive's Neapolitan dark balsamic)
 salt & pepper

Preheat oven to 425 degrees F.

Chop carrots & potatoes into equal size pieces. Place in glass baking dish.

Drizzle with olive oil & vinegar, salt, pepper, and thyme. Mix well.

Place chicken breasts in the middle of the pan. Drizzle with olive oil, salt, pepper, and thyme.

Cover and bake for 50-60 minutes, until chicken is 165 degrees. (REmove cover for final 10 minutes to allow browning.

Serve immediately, with extra oil & vinegar, if desired!
