A delicious way to enjoy fresh summer zucchini!!

 2 zucchini
 olive oil spray
 sea salt
 2 tsp dried oregano

Preheat oven to 425 degrees F. Line baking sheet with parchment paper.

Wash zucchini and slice into 1/4" rounds (I used a krinkle cut knife, but any knife will do!)

Place on parchment-lined baking sheet (to absorb moisture during cooking).
Spray evenly with olive oil spray, sprinkle with salt & oregano.
Flip and repeat on opposite side.

Place on top rack of oven and roast for 10 minutes, flip, roast 10 more minutes until beginning to turn golden brown.

Serve immediately and enjoy!
