Ready in 10 minutes - refreshing and flavorful side dish to accompany hummus, burgers, or rice!

Prep Time10 mins

For the salad:
 1 organic cucumber
 ½ red onion
 ½ cup fresh parsley, chopped
 other herbs: dill, lemongrass, mint
 ½ tsp ground garlic (optional)
For the dressing:
 1 tbsp extra virgin olive oil
 ½ tbsp vinegar (see below for suggestions)
 2 pinches sea salt & ground pepper

Prepare the veggies:

Wash & chop cucumber into small dice.
Mince onion & parsley.
Combine all ingredients and herbs in medium mixing bowl.

Prepare the dressing:

Combine oil, vinegar, salt, and pepper in a small bowl. Whisk until combined.
Pour over cucumbers, toss to coat evenly, and serve!
