A lightened up version of the classic banana bread, infused with maple syrup, coconut oil, warming spices, and nuts!

Dry ingredients:
 3 cups rolled oats
 1 cup raw nuts (cashews, walnuts, almonds, etc)
 1 ½ tsp cinnamon
 ground ginger, nutmeg, cardamom, or any other spices you love!
 ¼ tsp sea salt
Wet ingredients:
 1 ripe banana, mashed
 ¼ cup coconut oil, melted
 ¼ cup maple syrup
 1 tsp vanilla extract

Preheat oven to 350 degrees F.
Prepare baking sheet with parchment paper or use a nonstick baking sheet.

In a large bowl, combine dry ingredients (oats, nuts, cinnamon, spices, salt) and mix to combine.

In a medium bowl, combine wet ingredients (banana, coconut oil, maple syrup, vanilla) and mix well.

Add wet ingredients to dry ingredients and combine well.

Spread on baking sheet, distribute evenly.
Bake in preheated oven for 25 minutes, removing to stir at 10 minutes & 20 minutes.

It tastes AMAZING straight out of the oven and becomes crisper as it cools.
Delicious over coconut yogurt, almond milk, or as a topper for a smoothie bowl!
