Ready in literally 10 minutes, this dish is simple, delicious, and full of nutrients!

 2 medium zucchini (local & organic, if possible)
 1 roma tomato, diced (local & organic, if possible)
 ½ red onion, diced
 2 garlic cloves, minced
 ¾ cup garbanzo beans
 1 tbsp olive oil (The Crescent Olive's Tuscan Herb pairs great!)

Using a handheld spiralizer, prepare zoodles! (It took me less than 1 minute per zucchini.)
De-seed and dice tomato, 1/2 onion, mince garlic.

Heat olive oil on medium heat. Saute onion for 30 seconds, then add garlic, saute for 30 seconds.
Add tomatoes and garbanzo beans. Saute 1 minute.
Add Zoodles, saute 2 minutes. Top with salt & pepper.

That's it! You're done!
I topped mine with 1-2 tablespoons of tahini for a nutty flavor that complemented the garbanzo beans beautifully.
