This my go-to, crowd-pleasing, super-healthy comfort food!!

 2 large Russet potatoes (organic) OR any type of potato!
 2 tbsp olive oil (The Crescent Olive's Milanese Gremolata, Garlic, or Tuscan Herb pairs great!)
 generous sprinkle of salt
 freshly ground black pepper
 dusting of paprika (for color)
 pinch of garlic powder, turmeric, chili powder (optional)

Preheat oven to 400 degrees F.
Use non-stick baking sheet or line baking sheet with parchment paper or foil.

Cut potatoes into 1/4" strips and place into large bowl.

Coat with olive oil and desired spices/seasonings. (Don't put too much salt now - save some to sprinkle on top after baking!)

Place on baking sheet so that the fries DO NOT overlap.

Bake for 20 minutes. Remove from oven, turn fries on opposite side to bake/brown evenly.
Return to oven for another 15 minutes. They are done when they turn slightly golden brown.

Transfer to serving dish. Top with finishing salt and herbs for decoration if desired!
