A perfect protein-packed lunch, this salad features wild-caught tuna, lots of veggies, and is topped with roasted pumpkin seeds for the perfect crunch!

 3 cups arugula
 5 oz wild-caught fish (tuna, salmon, sardines)
 1 tbsp olive oil (divided)
 1 medium carrot, shredded
 2 scallions, minced
 ¼ tsp garlic powder
 ¼ tsp dried dill
 2 tbsp roasted pumpkin seeds
 black pepper, to taste

In a small bowl, combine drained & flaked fish, carrots, scallions, spices, black pepper, and 2 tsp olive oil. Mix well with a fork.

Arrange arugula over two plates.

Top each plate with half of the tuna salad.

Sprinkle 1 tbsp pumpkin seeds on top of each salad. Drizzle with 1 tsp olive oil and enjoy!!
