The ultimate healthy & warming comfort food, and so easy to make!

 2 spaghetti squash
 ½ jar organic tomato sauce
 1 lb ground turkey
 small block of Manchego cheese
 2 tbsp olive oil
 2 tsp dried oregano
 salt & pepper

Preheat oven (or toaster oven) to 375 degrees F.
Wash and dry spaghetti squash.
Slice stem off, then slice squash in half horizontally.
Scoop out the seeds and flesh.
Drizzle with olive oil and a pinch of salt.
Place cut side down on tray lined with parchment paper and bake until tender. (35-60 minutes, depending on size.)

While squash is roasting, heat 1/2 tbsp olive oil in pan and brown turkey meat.
When cooked thoroughly, add 1/2 jar tomato sauce, oregano, and pepper. Stir well and cook until sauce is warm.

When squash is tender, flip cut side up and rake some squash strands loose with a fork.
Drizzle additional olive oil, sprinkle sea salt & pepper.
Spoon in 1/2 cup of turkey mixture. Grate fresh Manchego cheese on top and sprinkle with oregano.
Enjoy!
This pairs great with roasted Brussels Sprouts, roasted broccoli, or green beans!
