 2 cups fresh strawberries (organic, if possible)

Wash strawberries and remove stem.

Chop into bite-sized pieces (4 pieces per berry).

Place in pot, heat on medium heat. (Use a tall pot so it doesn't splatter out while cooking.)

Stir occasionally, as the berries release their juices. Let simmer for about 20 minutes, or until it is about 50% liquid, 50% strawberry chunks.

Remove from heat and let cool. Store in an airtight container, preferably glass, and refrigerate!
