Bright, refreshing, and nourishing, this sprouted quinoa salad is sure to impress and satisfy! Customize it by adding your own local and fresh ingredients.

For the pilaf:
 2 cups sprouted quinoa - uncooked
 ¾ cup sweet peas
 ½ cup chopped fresh parsley
 1 tbsp fresh chives
For the dressing:
 2 tbsp The Crescent Olives Wild Fernleaf Dill Olive Oil
 1 tbsp The Crescent Olives Pineapple infused white balsamic OR white balsamic vinegar
 zest of 1 organic lemon
 1 tbsp lemon juice
 salt and pepper

Prepare quinoa according to package instructions. If using sprouted quinoa, the cook time is usually 15 minutes. Watch closely and remove from heat when finished. Keep the lid on and let sit for 5-10 minutes to finish absorbing all of the water. This step keeps the quinoa fluffy and prevents it from becoming mushy.

Use a fork to fluff the quinoa. Add peas, parsley, chives, and seasonings of your choice.

Whisk together the dressing ingredients and mix until well-incorporated.

Using a little glass bowl, scoop quinoa into bowl, invert on dish, and gently remove bowl. This forms a cute little dome shape that is impressive for entertaining!!
