With only 3 ingredients (Masa Harina, water, & salt), these healthy tortillas have no preservatives and add some fun to Taco night!

Corn tortillas:
 1 cup Masa Harina corn flour
 ¼ tsp sea salt
 1 cup hot water
Toppings:
 1 cup shredded chicken
 ½ cup guacamole
  cup feta cheese (crumbled)
 bunch of cilantro

According to the directions of Bob's Red Mill Masa Harina....

Mix salt into the masa harina. Slowly pour the water into the dough to reach a good consistency. (The dough should be firm and springy when touched, not dry or sticky.) Let rest for 45-60 minutes, covered with a damp towel.

Preheat griddle or pan to medium-high heat. Divide the dough into 12 two-inch balls. Press dough between two pieces of waxed paper or non-stick foil. Place flattened dough on the heated surface and cook about 30-60 seconds, until the top starts to look cooked. Flip to the other side and cook for another 30-60 seconds.

Top with guacamole, chicken, feta, and cilantro or your desired toppings!
These are best eaten fresh.
