Millet is a naturally gluten-free grain that is rich in B-vitamins, fiber, and protein. Infused with dill olive oil, this is the perfect side dish to any meal!

 1 cup uncooked millet
 2 ¼ cups water
 2 tbsp The Crescent Olive's Wild Fernleaf Dill olive oil
 salt & pepper
 parsley, to garnish

Rinse millet in fine mesh strainer.
In large saucepan, bring water to a boil.
Add millet. Return to gentle boil, cover, and gently simmer for 30 minutes.
Remove from heat, keep covered and sit for 10 minutes.

Uncover, drizzle with 1 1/2 tbsp Wild Fernleaf Dill olive oil, generously salt & pepper.
Using a fork, rake gently and mix.

To make a timbale, scoop grain into a small bowl. Push down slightly.
Invert onto plate and gently lift bowl.
Sprinkle with salt and pepper and garnish with fresh herbs!
