A refreshing and simple spring salad, filled with garden veggies, fresh-picked herbs, and delicious dressing!

 1 large cucumber, diced (organic)
 3 large Roma tomatoes, seeded & diced (organic)
 15 oz Navy beans, rinsed
 1 shallot, minced
 10 basil leaves, minced
 10 mint leaves, minced
 4 tbsp The Crescent Olive's white balsamic vinegar
 3 tbsp The Crescent Olive's Garlic OR Basil olive oil
 sea salt & pepper, to taste

Combine all ingredients in a large glass bowl (never put acidic ingredients into plastic containers!)
Mix well and marinate for 3 hours or overnight in the refrigerator.

Enjoy every bite while enjoying the fresh spring air!!!
