A nutritional powerhouse, combined with Parmesan cheese, gluten-free flour, eggs, and spices to create a delicious side dish!

 16 oz frozen broccoli
 2 eggs
 ¼ cup Parmesan cheese, finely shredded or grated
 ¼ cup gluten-free flour (brown rice flour, oat flour, almond flour, etc)
 1 tsp garlic powder and/or onion powder
 salt & pepper
 1 cup tomato sauce (I love Muir Glenn Tomato Basil sauce!)

You may bake OR pan-fry these broccoli bites. (both are yummy but baking makes them crispier!)
If baking, preheat oven to 350 degrees F and prepare a non-stick baking sheet.

Bring 3/4 cup water to a boil. Add frozen broccoli. Simmer 5-7 minutes, until soft.
Drain water.
Pulse broccoli in food processor until rice-sized pieces form OR chop with a knife or potato masher.

Add eggs and whisk. Add cheese, spices, salt & pepper, and mix well. Add flour, mix until the mixture holds together but is not too dry.

Form into 1.5 inch balls and cook as desired!
If baking, they take about 10-12 minutes. I like to top with extra Parmesan before baking.
If pan frying, heat coconut oil or olive oil and turn frequently to brown on all sides.

Try dipping in marinara sauce with some extra Parmesan, or just eat them as is!
