Ready in less than 20 minutes, this low-glycemic meal is full of protein & vitamins!

 ½ lb wild-caught shrimp
 2 tbsp olive oil (The Crescent Olive's Herbs de Provence is a great choice!)
 2 medium zucchini
 ½ lemon
 salt & pepper
 cumin, paprika, garlic powder, cayenne

Spiralize zucchini with handheld spiralizer. Set aside.

Prepare shrimp (remove tails, etc).

In a medium skillet, heat 1 tbsp olive oil over medium heat. Add zucchini, salt, pepper, and any desired seasonings. Saute for 3-5 minutes, tossing occasionally.

In a small skillet, heat other 1 tbsp olive oil over medium heat. Place shrimp in skillet. Sprinkle desired seasonings, salt, and pepper. Cook 1-2 minutes, flip, and cook 2 more minutes. Sprinkle seasonings on other side. Cover and remove from heat. Let sit for 5 minutes.

Place Zoodles on plate, followed by shrimp. Drizzle with additional olive oil. Sprtiz with lemon juice and parsley or dill or garnish!

Serve with roasted potatoes or brown rice. Enjoy!
