A simple and nutrient-dense dish to complement any meal!

 1 tbsp olive oil
 1 yellow onion, sliced
 1 pinch sea salt
 3 garlic cloves, minced
 1" piece of fresh ginger, minced
 1 cup matchstick carrots (or diced)
 1 lb kale (or other leafy green), thinly sliced
 2 tsp lemon juice

Heat 1-2 tbsp. olive oil in a sauté pan. Add the onions, carrots, a pinch of salt and stir. Sweat the onions until translucent and carrots begin to soften, about 6-8 minutes.

Add the garlic and ginger. Cook until fragrant and softened, about 2-3 minutes.

Add the greens on top, sprinkle a pinch of salt and add 2 tbsp water. Cover and let steam for for about 2-3 minutes.

Mix to incorporate, spritz with lemon juice and serve immediately!
