Way easier than it sounds, this weeknight meal can be made in the toaster oven and is full of fresh garden flavors!

Yields3 Servings

 3 chicken breasts
 3 sprigs of fresh rosemary
 ½ tsp garlic powder
 3 tsp olive oil (The Crescent Olive's Milanese Gremolata was amazing!)
 salt & pepper
 3 tsp grated Parmesan cheese

Preheat oven to 375 degrees F (toaster oven to between 350-375 degrees F).

Rinse fresh rosemary and pat dry with paper towel. Pluck each sprig off the stem. Using a large chef's knife, mince rosemary into small pieces. Set aside.

Place large piece of foil on baking tray (large enough to fold over and make a foil packet). Place chicken breasts in the middle of the foil/tray. Dust each side with salt, pepper & garlic powder. Sprinkle with rosemary (a little bit on the bottom and most of the rosemary on top). Drizzle with olive oil. Loosely wrap up the foil packet and place in preheated oven/toaster oven. Bake for 30-40 minutes, until 165 degrees F inside each breast.

Open packet, sprinkle 1 tsp of Parmesan cheese on top of each breast and return to oven for 5 more minutes to melt the cheese. Serve immediately!

This pairs great with grains and green veggies! I served this with sauteed bok choy the first time and green beans the second!
