A quick and simple alternative to mashed potatoes! Cauliflower has tons of Vitamin C, it is great for your bones, immune system, and healthy detoxification!

 16 oz bag frozen cauliflower OR 1 head fresh cauliflower
 ½ clove of garlic, minced
 1 drizzle of olive oil (I used The Crescent Olive's Garlic olive oil!)
 ¼ tsp sea salt
 1 tsp fresh thyme (or 1/2 tsp dried thyme)
 1 dash fresh cracked pepper

Cook the cauliflower: add to a large pot with water. Bring to a gentle boil and cook until tender, about 8-10 minutes, stirring occasionally.

Drain and transfer to food processor or blender. Add remaining ingredients and process for 1 minute, until silky and creamy! (Be sure to leave an outlet for steam!!)
**If you don't have a food processor, simply use a potato masher!!**

Garnish with additional thyme and serve warm!
