It’s almost spring, but ironically it’s April and we are still in winter/flu/immune system mode! It seems as though all we have heard about lately is the Coronovirus. While it’s always imperative to wash your hands, sanitize handles, and be careful when you’re out in public, it’s arguably even more important to strengthen your immune system so that if (and more likely WHEN) you come in contact with cold or virus germs, your body is able to mount a strong attack and prevent an infection. 
How do you do this?

  1. SLEEP
  2. Get fresh air
  3. Exercise
  4. Drink LOTS of clean water
  5. Eat healthy food!

And by ‘healthy’ food, I’m specifically referring to:

  • leafy greens (kale, spinach, chard, arugula)
  • herbs & spices (**turmeric**, ginger, garlic, oregano, thyme)
  • veggies & fruits of every color (beets, blueberries, broccoli, oranges)
  • whole grains & fiber (brown rice, quinoa, barley, oats)

And here is how I have been incorporating these superfoods:

Sauteed kale, quinoa medley, & white beans, topped with turmeric & garlic
Kale, carrot, & onion saute with white beans and oregano
Kale & eggs with turmeric & garlic, with a side of mashed sweet potato
Roasted broccoli and white beans, topped with fresh grated Parmesan cheese
Chicken baked in parchment paper, long grain brown rice, and kale, all seasoned with olive oil, salt, & pepper!

I hope this provides some inspiration for your daily meal prep!!

And I would like to point out that all of these meals were prepared under the following circumstances:

  • a 4-month old in my left arm
  • a 4-month old watching me from his highchair
  • made in 5 minutes because a 4-month old was about to start screaming

My point is: VERY do-able for any meal of the day!
