A Mediterranean twist on a classic comfort food, this dish is as zesty, fun, and nutritious as it is colorful!

 25 pita chips (homemade or Stacy's Multigrain Pita Chips)
 1 cup hummus (divided, some for nachos, some for dipping!)
 ¾ cup organic tomatoes, diced
 ¾ cup organic bell pepper, diced
 ½ cup scallions, sliced
 ½ organic cucumber, diced
 1 small shallot, minced
 ½ cup feta cheese, crumbled (organic, if possible)
  cup fresh parsley, chopped
  cup olives, sliced (optional)
 ½ cup tzatziki sauce (optional)
 2 tbsp olive oil (for garnish)

Spread pita chips on baking sheet, mostly overlapping.

Dollop hummus on top of chips (this acts as the "glue" to hold the toppings in place.)
Top with tomatoes, peppers, shallot, scallions, olives, and feta.

If you would like to heat the nachos, bake for 5 minutes at 350 degrees F - this step is optional.
After baking, top with cucumber, parsley, and a drizzle of olive oil.

Serve immediately with hummus, & tzatziki!
Leftovers can be stored in the refrigerator for a few days!
