In a small bowl, combine drained & flaked fish, carrots, scallions, spices, black pepper, and 2 tsp olive oil. Mix well with a fork.
Arrange arugula over two plates.
Top each plate with half of the tuna salad.
Sprinkle 1 tbsp pumpkin seeds on top of each salad. Drizzle with 1 tsp olive oil and enjoy!!
