This meal is ready quickly and is perfectly balanced with olive oil, salt, and a splash of red wine vinegar!

 1 tbsp olive oil
 2 cups pre-cooked brown rice
 2 cups pre-cooked green lentils
 1 bell pepper (any color) OR 3 ribs of celery
 ½ cup frozen chopped spinach (organic)
 ½ tsp salt
 1 tbsp red wine vinegar

In a medium skillet, heat olive oil. Sauté pepper for 4-6 minutes, until tender. Add spinach, stir and cook 2 minutes. Add rice, a splash of water, a drizzle of olive oil, and stir. Cover and cook for 2 minutes. Add lentils and a splash of red wine vinegar. Mix well, and cook until heated through.

To serve, add additional olive oil, salt & pepper, and any optional toppings such as feta cheese, nutritional yeast, or fresh herbs!
