 1 mango (any ripeness is fine)
 ½ organic red bell pepper, diced
 ¼ cup red onion, minced
  cup fresh cilantro, minced
 1 lime, juiced
 1 pinch sea salt, to taste

Combine all ingredients in a mixing bowl. Serve immediately - or refrigerate for 12-24 hours to allow flavors to marinate!
