Packed with omega 3's to reduce inflammation and improve brain health, this recipe has a crispy garlic crust with a moist and tender inside!

 2 6 oz fillets of wild-caught cod (or other white fish)
 4 garlic cloves
 1 tbsp fresh lemon juice
 2 tbsp olive oil (The Crescent Olive’s Meyer Lemon olive oil is perfect for this recipe!)
 2 tbsp fresh chopped parsley (or dried)
 salt & pepper

Preheat toaster oven or oven to 375 degrees F.
Line baking sheet with foil. Drizzle 1 tsp olive oil on foil and spread to grease baking sheet.

Place cod on prepared baking sheet. Pat dry with paper towel. Sprinkle with salt and pepper. Set aside.

Crush and mince garlic cloves.
Heat 1.5 tbsp Meyer Lemon olive oil on medium-low heat. Add garlic, saute for 1-2 minutes, then add lemon juice. Saute for 1 more minute and remove from heat.

Spread garlic mixture onto fish. Top with parsley. Lightly drizzle cod with additional olive oil.

Bake for about 18 minutes, rotating tray once to brown evenly, Fish is ready when flakes easily with a fork.
(Generally, bake for 10 minutes per inch of thickness.)
Serve with garnish of parsley! Pairs great with an arugula salad and some lemon-garlic rice!
