Creamy avocado, bright lemon, and nutty walnuts give beautiful flavor & texture to this dish... ready in 15 minutes!
Rinse each stem of kale thoroughly. Shake a few times in sink to remove excess water.
Remove the stems. (Either use your hands to pull off the leaves or use a chef's knife to cut it out.)
Roughly chop kale into bite-sized pieces.
Use salad spinner (if you have one) to remove the rest of the water.
Place kale in a large bowl.
Place walnuts into food processor (or blender). Pulse a few times until a coarse meal is formed. Set aside.
Combine all ingredients in bowl. Use your hands to massage the healthy fats (avocado and olive oil) into the kale leaves.
After washing your hands, sprinkle walnut meal on top of salad, and enjoy!
**This will keep for 2-3 days in the refrigerator and makes an excellent snack to increase energy and create glowing skin!
