The ULTIMATE comfort food, now made healthy! These can satisfy a chicken nugget craving for any kid (or big kid)!
Preheat oven to 425 degrees F. Prepare non-stick baking sheet or line with parchment paper.
Combine flours and spices in medium bowl.
Cut chicken into tenders (about 2" long).
Toss with olive oil in bowl, then transfer each piece into flour & spice mixture and use hands to coat evenly.
Transfer to baking sheet and spray with olive oil mist (to make them crispy!) I have an olive oil mister bottle that works great or you can use cooking spray (preferably without propellant).
Bake for 12 minutes, flip, and bake for an additional 6-7 minutes, until it reaches 165 degrees F.
Serve immediately and enjoy!!
(Make your own honey-mustard sauce by combining 1 tbsp honey to 2 tbsp mustard OR serve with organic ketchup!)
