Sweet beets, nutty chickpeas, tangy lemon, savory olive oil, mild garlic, and a pinch of sea salt make this an addicting (but healthy) snack!
1 package Trader Joe's steamed beets (or 2 cooked & peeled beets)
1 can chickpeas, drained & rinsed
2 tbsp tahini
2 tbsp The Crescent Olive's Meyer Lemon olive oil
juice of 1/2 lemon
1 large garlic clove, minced
⅛ cup water (less than usual due to moist beets!)
Pink Himalayan salt (to taste, about 3 generous pinches)

Combine all ingredients in a food processor and process for about 1 minute, until smooth & creamy!
Serve with fresh veggies, rice cakes, pita chips, baked lentil chips, or gluten-free crackers! YUM!
