This easy side dish packs a ton of vitamin A, antioxidants, & anti-inflammatory nutrients along with a warm & comforting flavor!
Wash & dice sweet potato into 1/4" cubes.
Peel & dice onion into small cubes.
Heat skillet on medium heat and add olive oil.
Add onions & pinch of salt, saute for 1-2 minutes, stirring occasionally.
Add sweet potato & another pinch of salt. Saute for 5 minutes, stirring about every 1-2 minutes.
Cover with lid and let steam for 7-9 minutes, stirring once. Taste for donensss. The sweet potatoes should be tender but not mushy. Cook for an additional 1-2 minutes if needed.
To serve: arrange greens on plate. Spoon hash over greens and add parsley and additional olive oil, if desired. Serve immediately or keep warm separate from lettuce!
