So refreshing, flavorful, and nutritious, this salad comes together in less than 10 minutes!

 1 cup organic arugula
 1 mango, diced
 1 cup organic blueberries
 ¼ cup goat cheese
 ¼ cup walnuts
 1 tbsp The Crescent Olive's Pineapple white balsamic vinegar
 1 tbsp The Crescent Olive's Ultra Premium olive oil
 salt & pepper

Toast walnuts in toaster oven for 3-4 minutes (on 275 degrees F) or toast in a pan for 4-6 minutes, until fragrant and golden. Set aside to cool.

Assemble arugula on two plates and top with fruit, cheese, and cooled nuts.

Whisk together olive oil & vinegar. Spoon equally onto each salad.

Top with salt & pepper to taste! Share with friends & family 🙂
