A cooling, juicy snack for a summer afternoon!

 2 organic tomatoes, sliced
 ½ cup guacamole (or hummus or pesto)
 1 handful microgreens (or fresh basil)

Wash and slice each tomato. Top with a generous scoop of guacamole or hummus. Garnish with microgreens or herbs. Enjoy immediately!

This can be enjoyed as is, or on top of a cracker (I love "Mary's Crackers"), on a thin rice cake (Lundberg Stackers or Trader Joe's Thin Rice Cakes), or atop toasted Ezekiel bread.
