Summer Kale Salad

A refreshing and delicious seasonal version of my classic massaged kale salad, which packs in vibrant colors & energizing nutrients!

Salad Ingredients:
 1 head of kale (OR bag of pre-washed kale)
 2 tbsp olive oil
 ¼ tsp sea salt
 1 cup organic berries (blueberries, raspberries, strawberries)
  cup goat or feta cheese (crumbled)
  cup toasted nuts (almond slices OR pumpkin seeds)
Dressing ingredients:
 2 tbsp Dijon OR brown mustard
 1 tbsp pure maple syrup OR honey (raw, if possible)

If using a head of kale, wash and dry thoroughly. Remove stem from each leaf of kale. Chop or tear into bite-sized pieces.

Drizzle 1-2 tbsp olive oil. Sprinkle with salt. Using your hands, massage oil & salt into kale, for 5-6 minutes, until kale is tender and bright green. (This makes it taste less bitter and enables your body to absorb the fat-soluble nutrients more effectively, not to mention it tastes great!)

Top with cheese, nuts, and fruit.

In a separate bowl, whisk together dressing ingredients. Drizzle on top of salad.
