Shaved Brussels Sprouts Salad

Crunchy, tangy, nutty, and sweet, this salad is addictingly delicious!

Salad Ingredients:
 1 lb fresh Brussels Sprouts
 1 crisp apple (Braeburn, Gala)
  cup dried cranberries
  cup toasted nuts (hazelnuts, almonds, and walnuts work well!)
 2 oz goat cheese, crumbled
Dressing Ingredients:
 3 tbsp extra virgin olive oil
 3 tbsp apple cider vinegar
 ½ tbsp pure maple syrup
 ¾ tsp sea salt

Wash Brussels Sprouts and pat dry.
To shred, you can carefully cut with a knife (10-15 minutes) or use the shredding blade of a food processor or madolin (be careful!)

Combine all salad ingredients (except nuts) and toss well.

Whisk together dressing ingredients. Mix with Brussels Sprouts and let marinate for 15 minutes or overnight. This recipe tastes good the first day but even better the second day! (The apples will not brown due to the apple cider vinegar in the dressing.)

Add nuts right before serving so they don't get soggy. Enjoy!!
