Mushroom Turkey Burgers

Sauteed mushrooms add a ton of flavor and moisture to these healthy burgers!

Burgers:
  lb organic mushrooms (crimini or white button)
 ½ tbsp olive oil, divided
 ¼ lb organic ground turkey
  tsp sea salt
Toppings:
 ¼ red onion, thinly sliced
 ¼ bell pepper, thinly sliced
 ½ oz feta or goat cheese
Salad:
 1 ¼ oz organic spinach or greens
 ¼ tbsp extra virgin olive oil (for dressing)
Preparing the mushrooms:

Wash and dry the mushrooms. Place in food processor and gently pulse a few times to break into smaller pieces.

Warm 1 tbsp olive oil in skillet and saute mushrooms for 5-7 minutes, until golden brown.
Remove from heat and let cool 5 minutes.

Preparing the burgers:

To a large bowl, add ground turkey, cooled mushrooms, and salt. Mix well until combined.
Shape into 4 burgers.

Warm remaining 1 tbsp olive oil on medium-high heat in pan. Cook burgers for about 4-5 minutes on each side, or until fully cooked.

Assemble the salad:

Place lettuce on plate.
Add burger(s).
Top with sauteed onions and peppers, cheese if desired.
Dress the salad with olive oil.
