Wash and dry the mushrooms. Place in food processor and gently pulse a few times to break into smaller pieces.
Warm 1 tbsp olive oil in skillet and saute mushrooms for 5-7 minutes, until golden brown.
Remove from heat and let cool 5 minutes.
To a large bowl, add ground turkey, cooled mushrooms, and salt. Mix well until combined.
Shape into 4 burgers.
Warm remaining 1 tbsp olive oil on medium-high heat in pan. Cook burgers for about 4-5 minutes on each side, or until fully cooked.
Place lettuce on plate.
Add burger(s).
Top with sauteed onions and peppers, cheese if desired.
Dress the salad with olive oil.
