Maple Cinnamon Steel-Cut Oats

A clean-eating, whole-food breakfast that is warm, chewy, and oh so flavorful!

 ½ cup uncooked steel-cut oats
 2 cups water
 1 pinch Himalayan pink salt
 ½ tsp cinnamon
 ¼ tsp ginger (or any other spices you have!)
 ½ tbsp pure maple syrup (or sweetener of choice)
 2 tbsp full-fat coconut milk (from a can)
  cup toasted almonds, raisins, etc
Optional Preparation Step:

Soak oats for ~6 hours (or overnight) to make them more digestible, promote quicker cooking, and improved nutrient absorption.
After soaking, transfer to a mesh strainer and rinse very thoroughly.

Cooking the Oats:

Bring 2 cups of water and a pinch of salt to a boil. Add oats and boil for 5 minutes.
Then, reduce heat to low and simmer uncovered for 25 more minutes, stirring every few minutes.

During the last one or two minutes of cooking, add in spices, dried fruit, and sweetener of choice.
Drizzle coconut milk on top.
Top with toasted nuts (if using) and enjoy immediately!
