Heal in a Curry!

Packed with flavorful ingredients that facilitate healing, this one-pot meal is super simple and comforting!

 1 tbsp olive oil (or ghee)
 ½ large onion, diced
 3 garlic cloves, minced (or 1/2 tsp garlic powder)
 1 tsp fresh ginger, minced (or 1/4 tsp ground ginger)
 1 tbsp tomato paste (or 1/2 tbsp ketchup)
 2 tsp cumin
 1 tsp turmeric
 1 tsp paprika
 15 oz diced tomatoes, with juice
 15 oz chickpeas, drained & rinsed
 1 large bell pepper, diced
 15 oz coconut milk (light or full-fat)

Heat olive oil (or ghee) in a large pot over medium heat.
Add onion, pepper, garlic, ginger, and a pinch of salt. Sauté for 2 minutes.

Add tomato paste or ketchup and spices. Sauté for 1 minute, stirring well.

Add remaining ingredients, bring to a simmer and cook for 20 minutes, stirring occasionally, until tender and fragrant.
Add salt & pepper to taste.

Serve warm over quinoa or brown rice. It also makes great leftovers!
